The stages of elaboration of our wines focus on transmitting the unique and differents character that our land brings us and our way of working the vineyard. The grapes harvested by hand and selected in the same field. They are handled in a way that guarantees their integrity to the maximum. The conditions of fermentation and maceration are modified according to the type of wine we want to make. In addition, we adapt the aging to the different wines. All this means that each vintage can have different aging depending on the weather conditions that the grape harvest has had, and the profile of our wines. Undoubtedly, the most important thing is that our main grape varieties are the local autochthonous: Manto Negro, Callet and Premsal Blanc. They are the varieties that transmit the essence of Mallorca and, therefore, also transmit ours.
